French Toast with Banana Coconut Cream

French toast with a twist was our delicious Sunday breakfast this weekend.  I’m always looking for or thinking up ways to enjoy traditionally sweet meals without all the sweet.  It’s a necessity for me, but it also is a fun adventure in creative rethinking!

Thus this Banana Coconut French Toast was born.  It was simple and scrumptious!  Here’s what we did:

For the toast:

Several slices of Essential Baking Company’s walnut bread
3-4 organic large eggs
2-3 Tablespoons organic whole milk
a good dash of organic ground cinnamon
a splash of organic real vanilla extract
zest from half an organic orange

Whisk all the ingredients together, except the bread and pour into a shallow dish.  Place the bread slices in the egg mixture and let soak till well saturated.  Then melt a little butter on a griddle and cook the toast slices till lightly golden on both sides.  If you have to do this in batches keep one batch  in the oven on warm while cooking the next.

For the topping:

1 organic banana
1/2 cup whole fat organic coconut milk
splash organic real vanilla extract

Blend all of the above in a blender till smooth and creamy.

Several freshly sliced organic strawberries. (Yes, I know – VERY out of season, but I had a Craving!  Notice the capital C in the word craving!)

Pulling it all together:

Put your slices of toast on the plates, layer fresh strawberry slices on top and then drizzle with the banana coconut cream.  Devour!

  1. They were quite good. And unlike the vegan banana pancakes we’ve tried in the past…no burning to the griddle due to the sugars in the banana!
